Banana muffins are one of those comforting bakes that make a home feel warm the moment they come out of the oven. Soft, sweet, and full of cozy flavor, they’re perfect for breakfast, a simple snack, or sharing with someone who needs a little lift. These muffins come together easily and are a lovely way to use up ripe bananas while filling your kitchen with a gentle, welcoming aroma.

When you have over-ripe bananas, you should make these muffins! Sure, there's banana cookies, Nutella banana bread, and banana pancakes, but if you want to aim for something quick, simple, but still impressing, make these with the streusel topping! Seriously going to be your new favorite muffin!

What you're going to need:

Three ripe bananas- the riper and browner your bananas are, the better! Unlike green bananas, over-ripe bananas give flavorful, rich, and sweet flavor to your bananas!

Butter & Oil- if you have checked out my Chocolate Chip Muffins, you know butter and oil are important for giving the best moist and fluffy texture! So don't pick one or the other.

Light brown sugar- this special ingredient gives these muffins a richer flavor that granulated sugar wouldn't provide!

Buttermilk- this keeps the muffins soft and fluffy. If you don't keep real buttermilk on hand you could use a buttermilk substitute, just keep on mind REAL buttermilk will give best results. 😊

Be careful not to over-mix while this can lead to dry, dense muffins! Please do NOT use an electric mixer!

  1. Mash your bananas, then add the oil and melted butter.
  2. Stir in the sugar, then add the eggs, vanilla, and buttermilk.
  3. Combine your dry ingredients in a separate bowl, then gently fold them into the wet ingredients.
  4. Portion the batter into a paper-lined muffin tin, filling each liner leaving ¾ of the way full.
  5. Prepare your streusel, if using, and portion over each muffin.
  6. Bake your muffins for 8 minutes, then reduce the temperature and bake for another 7-8 minutes until done.

The streusel topping is fun, crumbly texture to the soft, fluffy muffins. I really recommend it, but I know some people won't want to. And that's perfectly okay!

Can I add nuts?

Yes! You can add nuts or chocolate chips, although I if were to add these add-ins, I wouldn't recommend the streusel topping. You would add between 1-1½ cups of your favorite add-ins. Add them when you're halfway through mixing your dry ingredients to the wet.

Can I make these jumbo?

Yes! To do so, go ahead and bake at 425F for 8 minutes, then reduce the oven to 350F (don’t open the door!) and continue baking until the muffins begin to turn golden brown. This can take anywhere from 7-15 minutes, so keep an eye on them!

Can I skip the streusel topping?

Of course! I just like the crunch it adds to the soft muffin.
