-Secret ingredient for extra flavor & plush! Many coffee cakes rely on sour cream and buttermilk for a nice tender plush cake. BUT we are doing something different! We are adding cream cheese to the cake batter which makes this coffee cake the ACTUAL BEST COFFEE CAKE!! πAnd not to mention, it stays soft for days... (maybe it won't last that long!)
-Buttermilk without baking soda! So, in many recipes (like in my Banana Muffins) we combine buttermilk with baking soda for an acidic reaction that makes whatever we're making have a nice lift...NOT TODAY! We're not even using baking soda today, we're just relying on buttermilk to add a nice plush crumb. Kind of cream cheese, but together = the best coffee cake!
-Bake in whichever pan you have or need! I like to bake this in a 9x9 inch cake pan, BUT you can absolutely use a 9x13 inch cake pan! Whichever will work, I prefer metal, but glass will work.
-No pastry cutter needed! Best part! In many streusel recipes, you need a pastry cutter, but I don't have one so the kind of method I'll be showing you will be using melted butter. Adds a much richer and buttery streusel topping than using cold butter! π
What you're going to need:
Cream cheese- just talked about it...this is our secret weapon that makes this coffee cake so moist, melt-in-your-mouth delicious! Don't substitute, don't skip it, don't ignore it! You really need it for the best coffee cake. Don't use the tub like container because it has other additives that we don't need. Instead stick with full fat block cream cheese!
Sugar- Other coffee cake recipes use all granulated sugar. But I like a dense, (yet soft!) cake. And to achieve that, we add a lot of brown sugar (1 cup), and this not only enhances the flavor a lot, but makes the cake delicious! If you know me well, you know I love to use a combination of light brown sugar & granulated sugar. It gives us the best of both flavors!
Cornstarch- this secret ingredient elevates our coffee cake next level. I love using it on my Chocolate Chip Muffins, because it makes our cake moist and soft for days. I love using it anywhere I can!
Buttermilk- While whole milk would "work", I like going the extra mile and using buttermilk. Buttermilk adds a nice flavor, moisture, and softness to the cake. A buttermilk substitute could work if you don't have real buttermilk on hand! (That's what I do, and if you want me to share a buttermilk substitute, please tell me! π)
This batter will be thicker than what you may expect. Don't freak out! It is designed to be thick so we can have a nice smooth cake as the final result. Because of this, it will be tricky to spread the top layer of cake batter with the cinnamon-sugar ripple on the middle. But don't worry, it's possible!
